Pikelets – Gluten & Refined Sugar Free

I thoroughly enjoy spending a couple of hours in the kitchen, usually one day on the weekend baking and making yummy, healthy treats.  

If you’re a mum with active kids, hungry boys – you know they’re almost always hungry looking for something to eat.   Like us, they can reach for a food or food like product that contains empty calories, little to no nutrition, full of sugar, that spirals into bad moods (us too) and irritability. Not to mention wreck havoc on the gut.

For me, the things I make for the family are free from gluten, refined sugars and processed dairy.  These little gems can be enjoyed for breakfast, as a snack or dessert. *If you have very hungry kids and a big family, you may as well go ahead and make double the recipe

Ingredient List:

  • 6 eggs
  • 1 banana
  • 125g cassava flour
  • 120ml coconut milk 
  • 2 teaspoons cinnamon
  • 1 teaspoon of vanilla essence
  • 200g frozen raspberries
  • 1 tablespoon honey
  • Coconut cream
  • Maple Syrup
  • Cacao Nibs

Method:

  1. Put 3 whole eggs into the thermomix bowl.  Separate the other 3 eggs, keeping whites aside, yolks in with other ingredients.
  2. Place all other ingredients in the bowl.  Blend 30 seconds speed 4
  3. Scrape down sides of bowl & blend for another 10 seconds speed 4
  4. Pour contents into separate mixing bowl
  5. Insert whisk 
  6. Pour the egg whites into bowl and blend until formed
  7. Fold the egg whites into the pikelet mixture

 

TOPPING

  • Raspberry – Put the berries in a baking dish and drizzle the honey over the top.  Roast at 150 degrees. Cook until soft and juice has reduced.
  • Coconut cream or coconut milk that can be whipped.  You might like coyo, cream, custard or ice cream. 
  • Drizzle maple syrup over & top with cacao nibs, coconut chips/shavings or freeze dried berries. 

Enjoy as an open pikelet or repeat the process to make a stack
